【素油老婆饼】

老婆餅的起源有多個傳說,其中一個說法是古時一對窮苦夫婦,妻子把冬瓜做成蓉作餡製成圓形餅,並由丈夫在街市售賣,大受歡迎。丈夫便將餅命名“老婆餅”以感謝妻子。
老婆餅的由來另有一說,在從前,有個老婆因為公公生病了,家裡沒錢替公公治病,所以自願賣身為奴,深愛老婆的老公為了贖回妻子,努力研發了一種美味可口的餅,並且靠著賣餅的錢將妻子贖回,於是,後來的人就將這種餅稱為老婆餅。
另一傳說則是老婆餅由廣州蓮香樓首創,早年蓮香樓聘請了一位來自潮州的點心師傅,他把老婆在家鄉自製的冬瓜餅帶給酒樓其他師傅嘗試,其他師傅覺得好吃,於是蓮香樓便將之改良並推出,由於這是潮州師傅的老婆製作,便把它名為“老婆餅”。 资料来源于网络。
做老婆饼最好用猪油做皮,家里没有冬瓜,就试做了这个素油的QQ馅的老婆饼,也很好吃呢。不过,我没有做成圆饼状,做成半月形的。
用料:
馅料:
1:水1/2杯(116克),白糖1/2杯+1大匙(120克),干桂花1茶匙;
2:玉米油2.5大匙(30克),炼乳2大匙(30克),炒熟白芝麻2大匙(19克)糯米粉2/3杯+1大匙(90克);
水皮,油皮:
3:中筋面粉(All purpose flour)1杯(160克)加糖1大匙(14克)拌匀;
4:玉米油2.5大匙(30克),水大约1/3杯+1大匙(90克);
5:低筋面粉(Cake and Pastry flour)1/2杯+3大匙(95克),玉米油1/4杯(53克);
其他:
6:鸡蛋黄1个加水1茶匙;
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon。1杯=240毫升。以上的材料可以做12个老婆饼。
做法:
1、将1料放入一小锅里(图1),开大中火煮至微滚,调小火后,放入2料里油和炼乳拌匀,再放入剩余2料拌匀(图2)离火。将煮好的馅料盖上盖冷冻箱里冻30分钟,手上涂点有将馅料分成12等份保湿备用(图3)。
2、水皮:将4料倒入3料中(图4),和成软面团,然后揉到光滑,保湿静置30分钟(图4)。油皮:将5料拌成软面团(图6)。
3、手上稍涂点玉米油,然后将水皮和油皮各分成12份。做的过程要用保鲜膜盖住其他的皮料保湿。水皮一份擀成长圆形薄饼,取一份油皮均匀抹在擀开的水皮上(图7),沿纵向从一端叠三褶(图8)。擀开成长条(图9)后叠三褶(图10)。
4、然后擀开成一薄薄的长方形(图11),沿纵向叠四褶成长条(图12),旋转90度卷起成小球状(图13),保湿静置松弛10分钟。压扁小球(图14)擀成12厘米直径的圆饼,圆饼上半面上放一份馅料(图15),对折压边(图16),用叉子压紧边(图17)。
5、做好的饼放入铺了烤盘纸的烤盘里,刷上蛋液,放入预热至375oF/190oC的烤箱,烤20分钟。各家的烤箱不同,注意温度及时间。稍冷后,就可以开吃了。
看看素油做的皮也不错,下次等买冬瓜再做一次。
