【腊肠茄子】

我过去6-7年来一直用Gastrolux 不粘锅来煮菜,非常喜欢。这个锅不含特弗隆涂层,大火烧菜它也不变型。当然经过了六七年的操劳,不粘的程度不如新买的锅,但煎蛋煎鱼还没有问题。大家反映唯一的缺点是这个产品比较贵。感谢网亲Mary给我推荐了这个美国的Gastrolux 代销商,他家的价钱非常便宜,谢谢。
朋友的父母从四川来,想念家乡的风味食物,自己腌了香肠。送给我们一些,我就拿川味腊肠做了这个腊肠茄子,连从不吃辣的毛毛都抢着挑腊肠吃,直叫过瘾。
用料:
1:长条茄子4根470克,去蒂洗净;
2:川味腊肠1条;
3:橄榄油2大匙,葱花1大匙,蒜蓉1茶匙,姜3-4小片;
4:盐1/4茶匙,十三香粉1/4茶匙,糖1茶匙;
5:鸡粉1/4茶匙,头抽酱油1大匙;
6:香油1茶匙,葱花1茶匙。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、茄子切块,放到盐水里浸泡一下(图1),腊肠切片(图2)。
2、不粘锅置炉上开大中火,加2大匙油,放入葱花、蒜蓉和姜片炒香(图3)。再放入腊肠,翻炒1分钟(图4)。
3、将泡过水的茄子沥水后,放入锅里快速翻炒几下(图5)。调中火,放入4料,不停翻炒至茄子软身,接着放入5料翻炒均匀(图6)。
4、最后放入香油和葱花抄匀即可出锅。
1:要想茄子不吃油,关键是先放水里浸泡,沥水后即刻下锅,这样茄子外表有一层水,油吃不进去。而且能去除茄子的涩味,健康又美味。
2:做这个茄子最好用不粘锅,这样生煸过程中不会粘锅。
