【芋头糕】

芋头富含营养,又是碱性食物,是老幼皆宜的素食佳品,平时应多吃点。这次买的大芋头非常好,做了芋头糕,很棒的早餐噢。
1:大芋头去皮,得净肉450克;
2:腊肠1.5根,虾米2大匙在水里泡软;
3:橄榄油2大匙,姜蓉1茶匙,葱花3大匙,
4:盐1又1/3茶匙,糖1/2茶匙,鸡精1/4茶匙;
5:粘米粉半包大约1又1/3杯(180克),水2杯(475克);
6:橄榄油2-3大匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、大芋头是这样的(图1),里面有紫色的丝(图2),去皮洗净切成细丝。腊肠和泡软的虾米切小粒待用。
2、不粘锅置炉上开大中火,加1大匙橄榄油,炒香姜蓉和葱花,下腊肠和虾米炒出香味(图3)。然后放入芋头丝翻炒,再加4料炒匀(图4),用中火炒至芋头丝有些软身离火。
3、粘米粉加2杯水调成面糊(图5),倒入芋头丝里拌匀(图6)。将芋头糊倒入中号的长方形玻璃盒(Lock & Lock glass container)里(图7),如果有多余,放入一小碗里同蒸。
5、用小刀将萝卜糕沿四周剥开,反扣在案板上,用力震下来,然后切薄片(图9)。不粘锅里放入1大匙橄榄油,用中火将芋头糕两面煎微黄(图10),就可以上桌了。
