【蒸虾仁蛋羹】

这个虾仁蛋羹又嫩又滑,非常适合老人家和小孩子们。
1:大中号老虎虾4个,去肠去壳,洗净沥水待用;
2:盐1/8茶匙,白胡椒粉1/12茶匙,生粉1/4茶匙,香油1/4茶匙;
3:鸡蛋1个,盐1/3茶匙,温水150毫升;
4:香油 1/2茶匙,葱花1/4茶匙,生抽1/2茶匙(生抽可以不用)。
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。
做法:
1、虾仁切丁,加2料,抓捏均匀后腌20分钟(图1)。鸡蛋1个(图2)加盐打散,然后加入150毫升温水(图3),搅拌均匀。
2、用滤网篦去蛋液上的泡沫(图4),将蛋汁轻轻倒入碗中(图5),盖上保鲜膜,用牙签戳几个洞(图6)。蒸锅放小半锅水用大火烧开,放入盛蛋汁的碗,开大火蒸10分钟(图7)。
3、用毛巾垫着取出盛鸡蛋的碗,拿掉保鲜膜,再将虾仁丁轻轻摊放在鸡蛋羹上,再重新盖上保鲜膜,用牙签戳上几个洞(图8)。继续大火蒸8分钟,取出虾仁蛋羹,撒上4料即可食用。
