【虾仁蛋卷】

虾仁蛋卷只不过是虾仁炒蛋的变化,样子不一样了,孩子们也会喜欢。

用料:
1:大中号老虎虾12个,去肠去壳,洗净沥水待用;
2:盐1/4茶匙,白胡椒粉1/8茶匙,生粉1茶匙,香油1/2茶匙;
3:鸡蛋4个,盐1/2茶匙,绍酒1茶匙,水1大匙,葱花1.5大匙;
4:橄榄油3大匙。
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。

做法:
1、虾仁切丁,加2料(图1),抓捏均匀腌20分钟(图2)。不粘锅置炉上开中火,加1大匙油,放入虾仁丁,炒至5-6成熟捞出待用(图3)。

2、鸡蛋加剩余3料(图4)打散待用(图5)。不粘锅洗净,开中火,水干后加1大匙油,放入一半蛋液(图6),待蛋液底部开始凝固后,放上一半虾仁(图7),用两个铲子轻轻将蛋皮上下覆盖住虾仁卷起来(图8)。
3、然后两面煎至微黄,即可盛出,重复另一半的蛋液和虾仁。虾仁蛋卷切段食用。
