【面鱼儿-疙瘩汤】

周末在家里吃的中午饭大都是面条,今天换个花样。寒冷的冬天,吃上一碗热热的面鱼儿(也叫疙瘩汤),再配上一盘香喷喷的锅贴,幸福的滋味慢慢品吧。
1:西红柿一个240克;
2:橄榄油1大匙,葱花1.5大匙,盐3/4茶匙,白胡椒1/8茶匙,鸡粉1/4茶匙,水4杯;
3:中筋面粉(all purpose flour)1杯160克,水1/2杯+3大匙(共163克);
4:青菜苗250克,洗净待用;
5:鸡蛋一只;
6:香油1茶匙,葱花1茶匙。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、西红柿切片。中号锅置炉上开大火,加1大匙橄榄油,炒香2料里的葱花(图1),下西红柿片翻炒1-2分钟(图2),然后放入剩余2料(图3),开中火煮着。
2、将所有3料放一中号碗中拌匀(图4),然后用一双筷子顺一个方向搅拌,至面糊均匀上劲有弹性(图5)。
4、放入青菜苗(图8)煮2分钟。一只鸡蛋打散,将蛋液慢慢倒入面鱼锅里(图9)。离火搅拌一下,放入香油葱花再搅拌下,就可以盛出开吃了。喜欢辣的可以加1大匙辣椒酱。
