多滋味-【牛肉炒蚕豆】

亲们一定要试试这个牛肉炒蚕豆,牛肉好滋味,是下饭的好菜。
用料:
1:牛肉330克(牛腩排flank steak),厨酒1茶匙,盐1/3茶匙,生粉1茶匙,水1大匙;
2:蛋清半个;
3:蚕豆仁130克;
4:橄榄油4大匙,蒜蓉2茶匙,姜丝1.5茶匙;
5:厨酒1茶匙,盐1/4 茶匙,水4大匙, 生抽酱油 2茶匙,头抽酱油1茶匙,糖1茶匙,白胡椒粉1/8茶匙,金兰酱油膏1大匙;
6:葱花1茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、牛肉洗净沥水,切薄片(图1),放入剩余的1料(图2),用手抓捏均匀,然后放入半个蛋清拌匀,静置20分钟。
2、开大火将不粘锅烧热(大约1-2分钟),加3大匙橄榄油,立即放入牛肉片(图3),快速划散肉片,炒至八成熟(图4)。
3、原锅置炉上开大火,加1大匙橄榄油,炒香4料里的蒜蓉与姜丝(图5)。放入蚕豆仁翻炒几下(图6),再下5料里的厨酒和盐炒匀,然后放入4大匙水,煮至蚕豆仁断生(图7)。
4、放入剩余5料翻炒几下(图8),然后放入牛肉及1茶匙葱花(图9),翻炒兜匀出锅。
