【蓝莓司康】

放假不上班,做了些蓝莓司康当早餐。这个容易做也很快,刚出炉的司康涂上果酱吃,里面非常绵软,外面酥脆真是好美味。毛毛一口气吃了3个还不过瘾。
用料:
1:中筋面粉1杯(160克),白糖2大匙(30克),盐1/6茶匙,无铝泡打粉1.5-2茶匙;
2:黄油(butter)2.5大匙(40克),切小块;
3:蓝莓干1/4杯(44克);
4:鸡蛋一只打散取一半,牛奶1/3杯(78克);
其他:
5:另外一半蛋液加水1大匙拌匀,留着刷司康用。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、将所有1料放一盆里充分拌匀,放入切小块的黄油,用手将面粉抓捏到成肉馅样(图1)。放入1/4杯蓝莓干(图2)拌匀待用。
2、鸡蛋打散,取一半蛋液放一小盆里,加1/3杯牛奶(图3),用叉子搅拌均匀(图4)。将牛奶蛋液倒入面粉盆里(图5),用叉子兜匀成大块(图6)。
3、面团会很软很黏手,用叉子把面团转到撒了干面粉的案板上,稍揉3-5下。压成厚1厘米的饼,用直径4.5厘米的小号饼干模切出司康块(图7)。边边角角的面团再重新压成饼,同样切出司康块。
4、司康块放入铺了烤盘纸的烤盘里,刷上5料的蛋液(图8)。放入已经预热至420F/215摄氏度的烤箱里烤10-12分钟左右至表面金黄,拿出稍冷,就可以食用了。
