【烩带子】

Costco买的冰冻大带子,非常不错,做了这个烩带子,大小领导都很喜欢。
1:冰冻大带子一包(680克),提前放冰箱里化冻,盐1/3茶匙,白胡椒粉1/8茶匙;
2:番薯粉(sweet potato starch)1/4杯;
3:小香菇5朵,黑木耳6朵(6克);
4:雪豆100克;
5:橄榄油3大匙,葱花1大匙,蒜蓉2茶匙,姜片1茶匙;
6:蚝油1大匙,头抽酱油1大匙,盐1/4茶匙,糖1/3茶匙,水1/2杯;
7:香油1茶匙。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、香菇温水泡发后洗净切丝。黑木耳用水泡发后洗净,撕小块。雪豆摘去两头,剔去筋络,洗净待用。
2、带子冲洗干净,用纸巾擦干,放入剩余1料拌匀(图1),两面沾上薄薄的番薯粉(图2)。番薯粉又称地瓜粉,是这样的(图3)。在闽菜中经常用到番薯粉,番薯粉有粗粒和细粒两种,以粗粒的为佳。番薯粉也可以用于油炸,肉类海鲜沾上番薯粉油炸后,口感酥脆而且颜色漂亮。
3、不粘锅加2.5大匙油,置炉上开大中火,放入带子煎黄一面后,翻转再煎黄另一面(图4)捞出。
4、原锅加0.5大匙油,中火炒香5料里的葱花、蒜蓉和姜丝(图5)。放入香菇丝和黑木耳翻炒几下,然后放入6料炒煮(图6)至汁浓。
5、放入雪豆炒1分钟(图7),最后放入煎好的带子(图8),中火煮1分钟。下1茶匙香油,轻轻兜匀就可出锅了。这样做的带子非常鲜嫩可口。
