【冬瓜肉丸】

非常美味又健康的菜, LD非常喜欢.
1:冬瓜1000克;
2:精瘦猪肉馅300克;
3: 红葱头1-2个(80克);
4: 盐1/2茶匙, 黑胡椒粉1/6茶匙, 花椒粉1/6茶匙, 生粉2茶匙, 香油2茶匙, 头抽酱油1大匙, 水2-3大匙;
5:牛油果油 或其他素油1.5大匙, 干虾米2大匙, 葱花1大匙, 姜3克切片;
6: 盐1茶匙, 头抽酱油1大匙, 黑胡椒1/4茶匙, 鸡粉1/4茶匙, 水1/2杯;
7: 葱花1茶匙, 香油1茶匙.
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、冬瓜去皮籽洗净沥水,切2厘米长宽0.3厘米片(图1).红葱头去皮洗净沥水, 切小丁放一盆里(图2), 加猪肉馅及所有4料(图3),用筷子顺一个方向搅拌2-3分钟待用(图4)。
2、不粘锅,置炉上开大中火,加牛油果油1.5大匙,油稍热, 放入虾米, 姜片, 葱花(图5)翻炒30秒, 然后下放入冬瓜翻炒1分钟(图6).
3、放入所有6料炒匀 (图7),盖盖中火煮3-5分钟(图8). 打开盖子, 炒几下, 将冬瓜铲到一边, 快速用小勺舀出大约2茶匙肉馅,右手持勺,与左手掌配合搓成直径1.5厘米大小的丸子放入锅里(图9), 盖盖中火煮1.5分钟.
4、打开盖子, 撒上葱花及1茶匙香油(图10), 兜匀出锅.
