【凉拌莴笋】

用料:
1:莴笋780克去皮后500克, 盐3/4茶匙;
2:五香花生1/2杯 (五香花生的做法:花生一包300克,冲洗干净加水2杯,盐3/4茶匙,八角1-2粒,丁香1粒,五香粉1/2茶匙,煮滚后,调小火焖煮1小时即可);
3:辣椒油1大匙,蒜蓉2茶匙,葱花1茶匙;
4:糖1/4茶匙,鸡粉1/6茶匙,葡萄醋2茶匙;
5: 香油 1茶匙,;
6:白生芝麻1大匙。
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、莴笋削去外皮,冷水冲干净,沥水(图1),切细丝(图2)。用开水将莴笋丝烫下(图3)沥水后放一碗中,加3/4盐拌匀(图4),腌10分钟,泌去多余汁水。
2、用一小锅中小火将白芝麻炒黄待用(图5)。
3、小锅加1大匙辣椒油,中火将蒜蓉葱花炒香(图6),倒在莴笋丝上。放入五香花生米,炒好的芝麻(图7),加调味料4-5拌匀即可。
