【卤肉酥饼】

用料:
面团:
1:中筋面粉1.25杯(all purpose flour,200克);
2:热水1/2杯+1.5大匙(140克),玉米油或牛油果油 1大匙(11克);
油酥:
3:玉米油或牛油果油 3大匙(38克),低筋面粉4大匙(cake & pastry flour,40克),盐1茶匙,拌匀即可;
馅:
4:卤肉或红烧肉200克,见 红烧蹄髈;香油 1茶匙
5:葱3棵;
其他
6:玉米油或牛油果油 2大匙,煎饼用。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、面团:盆内放入1料的面粉(图1),用筷子边搅拌边倒入2料里的水成块状,然后倒入1茶匙玉米油(图2),揉成光滑面团,在面团生均匀涂点点油(图3),盖上保鲜膜醒20分钟。
2、馅:卤肉切成细丁(图4)拌上1茶匙香油,葱去根洗净切葱花(图5)待用。
3、饼:手上和案板上稍涂点玉米油,然后将面团分成8份,揉成长条压扁,用手压成薄皮(图6)。将油酥(图7)均匀抹在擀开的饼皮上,放2大匙肉馅和2茶匙葱花(图8),从上往下包住卷成圆筒(图9)。
4、【AirGo】插上电源,用“Function”选“Crepe/Nann”,然后点“Start”预热。这时加2大匙油到煎锅里,将饼压扁成7-8厘米圆饼,放入锅里(图10)。盖上盖,程序自动进行烤
5、饼煎到大约8-9分钟时或等到提醒翻转时,打开锅盖将饼翻转一面(图11),盖上盖继续煎。程序结束后,盛出饼,趁热吃,味道超好。
