【嫩炒里脊】

去日式餐厅吃自助餐经常可以点一款蒙古牛肉，味道炒的不错。老爷子对红肉比较不喜欢，就用小里脊肉做了这款蒙古猪肉，非常嫩且好味道，大家不妨试试。
用料:
1：小里脊肉一条350克，生抽酱油1大匙，头抽酱油1大匙，生粉1茶匙，水2大匙；
2：牛油果油 或其他食用油1.5大匙，姜丝1茶匙，蒜蓉2茶匙；
3：葱2条去根洗净切寸段；
4：蚝油1大匙，老抽酱油1大匙，白胡椒1/8茶匙，糖1茶匙；
5： 香油 1/2茶匙；
注：1大匙=15毫升=1 Tablespoon，1茶匙=5毫升=1 Teaspoon，1杯=240毫升。
做法：
1、里脊肉洗净去掉白膜切薄片（图1），放入所有1料（图2），用手抓捏2-3分钟（图3），静置10分钟。姜蒜准备好（图4）待用。
2、不粘锅置炉上开大中火，加1.5大匙牛油果油，放入姜丝蒜蓉（图5）炒香。下腌好的肉片（图6）翻炒至6成熟。
3、下葱段及所有调味料4料（图7），再炒约1分钟至肉片刚刚熟（图8）。
4、最后放入1/2茶匙香油，炒匀出锅。
