【嫩炒里脊】

去日式餐厅吃自助餐经常可以点一款蒙古牛肉,味道炒的不错。老爷子对红肉比较不喜欢,就用小里脊肉做了这款蒙古猪肉,非常嫩且好味道,大家不妨试试。
用料:
1:小里脊肉一条350克,生抽酱油1大匙,头抽酱油1大匙,生粉1茶匙,水2大匙;
2:牛油果油 或其他食用油1.5大匙,姜丝1茶匙,蒜蓉2茶匙;
3:葱2条去根洗净切寸段;
4:蚝油1大匙,老抽酱油1大匙,白胡椒1/8茶匙,糖1茶匙;
5: 香油 1/2茶匙;
注:1大匙=15毫升=1 Tablespoon,1茶匙=5毫升=1 Teaspoon,1杯=240毫升。
做法:
1、里脊肉洗净去掉白膜切薄片(图1),放入所有1料(图2),用手抓捏2-3分钟(图3),静置10分钟。姜蒜准备好(图4)待用。
2、不粘锅置炉上开大中火,加1.5大匙牛油果油,放入姜丝蒜蓉(图5)炒香。下腌好的肉片(图6)翻炒至6成熟。
3、下葱段及所有调味料4料(图7),再炒约1分钟至肉片刚刚熟(图8)。
4、最后放入1/2茶匙香油,炒匀出锅。
