【家常肉饼】

加了红葱头做的馅, 汁水非常多, 领导说是爆浆肉饼, 皮薄馅满, 非常好吃. 大家试试吧.
用料:
面团:
1: 中筋面粉(All purpose flour) 1.5杯(240克,面没筛过,是从面粉袋里直接舀的);
2: 开水1/2(120克), 冷水1/4杯(60克)
3: 牛油果油 或其他的油2茶匙;
4:油酥: 玉米油2大匙(25克),中筋面粉4大匙(40克)拌匀成油酥
馅:
5:瘦肉馅200克;
6:红葱头2个(120克), 葱1根;
7: 香油 2茶匙, 头抽酱油1大匙, 老抽酱油1大匙, 生抽酱油1大匙, 蚝油1大匙, 盐1/6茶匙, 黑胡椒粉1/4茶匙, 鸡粉1/4茶匙, 生粉或玉米淀粉1.5茶匙, 水2大匙;
其他材料:
8: 牛油果油或其他油2大匙, 用来煎饼.
注:1大匙=1tbsp=15毫升,1茶匙=tsp=5毫升,1杯=1cup=240毫升。
以上材料做10个肉饼。
做法:
1、面团: 将2料里的滚开水缓慢倒入1料面粉中,一边用筷子不断搅拌成块状加入2料里的冷水和成软面团(图1)。倒入2茶匙油,揉成光滑面团(图2), 盖上湿布或保鲜膜醒1-2小时。
2、馅: 红葱头剥去老皮水冲洗后切细丁(图3). 葱也去根洗净切葱花. 将肉馅及所有5-7料放一盆里(图4), 顺一个方向搅拌100次至馅粘稠赏金待用.
3、案板和手上涂些油,将面团揉成长条,分成10个剂子(图5). 每个擀成10厘米宽30厘米长饼皮, 放上2-3大匙肉馅在一端(图6), 面皮其他部分均匀涂上1/10的油酥. 从左向右卷起(图7),收口包好(图8), 稍微压扁做好肉饼.
4、不粘锅开中小火,加2茶匙油(可以不加油),放入5个肉饼(图9), 煎黄一面,翻转身(图10)。再煎黄即可出锅。非常好吃啊。
