毛毛和毛毛爸都是超喜欢花生酱,这款巧克力丁花生酱酥饼深受喜爱,刚烤出来的饼干是外酥内松软,太好吃了。不过,甜点总是不健康,最好早餐时吃一块吧。

用料:
1:面粉2/3杯(105克),苏打粉1茶匙;
2:牛油(Butter)1/4杯(60克)室温软化,花生酱1杯(240克), 红糖3/4杯(130克);
3:特大鸡蛋1个, 香草香精 1茶匙;
4:半甜巧克力丁1/4杯(47克)。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。以上的材料可以做24块巧克力丁花生酱酥饼。

做法:
1、将1料里的面粉和苏打粉放入一盆里(图1),充分用勺子拌匀待用。将2料里的牛油,花生酱和红糖放入另一盆里(图2),用电动搅拌器高速打2分钟(图3)至均匀。
2、放入3料里的鸡蛋和 香草香精(图4),用电动搅拌器高速打2分钟至均匀。

3、放入先前拌匀的面粉(图5),搅拌器低速打1分钟拌好(图6),用橡皮刀将搅拌头上的面团刮下。放入半甜巧克力丁(图7),用橡皮刀拌匀(图8)。盖上保鲜膜,冰箱里冷藏30分种。

4、预热烤箱至375F/190C。取一小块面团,在手上(图9)揉成直径2厘米的球,将巧克力丁花生酱酥饼坯放到铺了烤盘纸或垫的烤盘上(图10)。

5、将烤盘放入已经提请预热至375F/190C的烤箱内,烤8-10分钟,至表面微黄。拿出冷凉即可食用,入口酥香啊!
心得分享:
1:巧克力丁花生酱酥饼可放入密封盒子里室温储存4-5天,可以冰冻起来,吃点时候提前一天拿出就好。

    I bought and roasted some raw peanuts last week to cook Kung Pao chicken. After two failed attempts at Kung Pao chicken, I became a bit leery about using peanuts in Chinese cooking. While pondering what to do with the remaining peanuts, I came across this peanut butter cookies recipe posted by Maomaomom. Hence a good solution to my leftover peanuts.

    I made my own peanut butter by grinding roasted peanuts in a blender with a pinch of salt, a TBSP of honey and a TBSP of canola oil. Then I followed Maomaomom’s recipe to make a batch of peanut butter cookies. They were so yummy!

    I saw a few more highly rated peanut butter cookies recipes posted on other websites. They all seem a bit too fatty and sugary to me. Maomaomom’s recipe is hands down the best!
