【椒盐烧饼】】

有空做了这个椒盐烧饼，挺酥的很好吃。
发面皮：
1：中筋面粉(All purpose flour) 1又3/4杯（280克，面没筛过，是从面粉袋里直接舀的）；
2：不烫手的温水3/4杯+4茶匙（200克），糖1/2茶匙，快速发酵粉(Fast Rising Yeast) 1.25茶匙，面粉2茶匙，搅拌均匀，静置10分钟；
3：玉米油1茶匙。
油皮：
4：中筋面粉3/4杯-2茶匙（110克），玉米油5大匙（67克）；
椒盐葱花：
5：葱2根洗净切碎末；
6：盐1.25茶匙, 鸡粉¼ 茶匙；
7：花椒粉3/4茶匙；
其他材料：
8：白芝麻1/2杯；
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、发面团：盆内放入1料的面粉后加入2料揉成软面团。这时面团会粘手，加3料玉米油1茶匙，揉均匀（图1），放在暖和的地方保温保湿发酵。
2、油皮：将4料放入小盆里拌匀（图2）待用。
3、等到面团发至原来的两倍大。案板上少少面粉，将发好的面团揉成长条，擀成长方形薄饼，油面均匀抹在擀开的饼皮上(图3)。两端往中间叠三折（图4）。转90度擀开成长方形，两端往中间再叠三折。
4、再擀开成长方形，均匀撒上葱花，盐，鸡粉及花椒粉（图5），从下往上叠四折（图6），切10等份（图7）。放入盛白芝麻的小碗里沾上一面芝麻(图8)，然后翻转放案板上，压扁擀成12厘米长方形饼状(图9)。
5、烧饼坯放入铺了烤盘纸的烤盘里（图10），放入预热至400F/205摄氏度的烤箱里，烤18-20分钟即成。各家的烤箱不同，注意温度及时间。若是烤18分钟后还不上色，开上火Broil档2到3分钟。
6、烤好的椒盐烧饼稍冷即可食用。
Tips：
烧饼一次吃不完的话，可以放冰箱或冰冻室存放。吃的时候在微波炉里热15-20秒后，再放面包炉(Toaster)里用低热档烤一下，你就可以吃到跟新鲜出炉一样的酥、松、香的烧饼了。是一款绝好的早点及茶点。
