水晶烧麦1 水晶烧麦

用料:

1:虾300克,去壳洗净洗净切小粒。

2:猪里脊肉100克,洗净切小粒。

3:盐2/3茶匙,白胡椒1/8茶匙,生粉1大匙,绍酒1大匙,水1.5大匙。

4:芹菜30克,洗净切小粒,葱花2大匙,姜末1.5茶匙,香油1大匙,糖1/3茶匙,李锦记旧庄蚝油1大匙。

5:澄粉1杯,淀粉1/4杯,开水3/4杯,菜籽油适量。

做法:

馅:取一盆,放1,2和3料拌匀,用手抓捏几下,腌20分钟。然后放入所有的4料,用一双筷子顺一个方向搅拌至馅上劲。

皮:盆内放入澄粉和淀粉拌匀,边用筷子搅拌边将开水倒入面粉里,稍冷加1大匙菜籽油揉成光滑面团,盖上醒20分钟。

把醒好的面团分成24份,每份擀成中间厚边薄的皮,加1大匙馅料皮中间,四面拉起靠上端捏下包成烧卖坯。烧卖底在菜籽油里沾一下放入铺了湿布的蒸锅内,大火蒸8分钟即可。
