【炸肉丸】

平时很少油炸, 偶尔做一下, 外酥里鲜嫩味美, 好吃.
材料:
1: 精瘦猪肉馅450克;
2: 香辣笋一包(180克);
3:葱3根切葱花, 姜2克切末;
4: 盐1/4茶匙, 十三香粉1/4茶匙, 生粉1.5大匙, 香油1大匙;
5:头抽酱油1大匙, 生抽酱油1大匙, 鸡粉1/4茶匙, 水3大匙;
其他:
6: 面粉1杯;
7: 菜油或玉米油3杯.
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、香辣笋(图1)切碎, 将所有1-5料放入一盆中(图2),用筷子顺一个方向搅拌至少100下,至馅发粘上劲(图3)待用。
2、将面粉一杯放一塑料袋里, 用一小汤勺沾下水,舀出大约4茶匙肉馅,右手持勺,与左手掌配合搓成直径2.5厘米大小的丸子放入面粉里(图4). 提起袋子轻轻晃动, 让面粉均匀裹上. 然后把丸子轻轻抖掉多余面粉放烤盘纸上(图5). 依次做好所有的丸子, 共30个.
3、中号锅放入3杯玉米油,开中火将油烧至七八分热, 一次放入10个丸子(图6)。炸成浅黄色捞出(图7),调大中火, 让油再烧热些, 放入丸子复炸30-60秒至金黄色(图8), 捞出用纸巾吸去多余的油即可。
4、依次炸好其他20个丸子, 炸好的丸子趁热吃, 外酥里嫩, 好吃.
