饼:
1:中筋面粉(All purpose flour) 1.5杯(240克,面没筛过,是从面粉袋里直接舀的),盐1/2茶匙;
2:刚煮滚的水1/2杯+1大匙(135克), 冷水3大匙(45克);
3:牛油果油 或其它素油1/2茶匙;
4:玉米油2大匙(25克),中筋面粉4大匙(40克)拌匀成油酥;
馅:
5:卤小牛腱2条切非常薄片,卤小牛腱做法见茶香酱牛:
6:葱2条洗净切细丝;
7:甜面酱6 x1茶匙;
其他:
8:油5×1茶匙;
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。以上材料可以做6个卷饼。
做法:
1、盆内放入1料的面粉和盐拌匀,边用筷子搅拌边倒入开水(图1),加冷水45克拌匀揉成软面团,加1/2茶匙的油揉光滑(图2),盖上保鲜膜醒20分钟。
2、把所有4料放一小碗里搅拌均匀(图3)成油酥待用。把面团分成6等份,取一份稍揉压成饼状,擀成椭圆形厚3毫米的薄皮,均匀摊上1/6的油酥(图4)从下往上卷成筒,转90度(图5),稍微擀开(图6),再从上往下卷成筒,用手团成球状(图7)。一次做好其他5份用保鲜膜盖住(图8)。
3、取一份面团压扁,擀成直径20厘米的饼。RoPot自动炒菜机插上电源,按下开关键,加1茶匙油到平底内锅里,放入擀开的饼(图9),盖上锅盖,用Function键选 Pan fry键(4分钟),再按-将时间减少到2.5分钟,程序自动进行了.
4、程序完成后,取出饼放一盘子上,放1茶匙甜面酱(图10)在面饼上抹匀(图11)。将切薄的卤牛肉(图12)放7-8片在饼上,加些葱丝,将饼卷起,然后切成段(图13),就可以食用了。
