简单美味【里脊虾炒饭】

上个月去英国开会,餐馆里吃到一款炒饭虽然味道不错,居然要18英镑,够宰人的。今天如法炮制了这个炒饭,真的好吃哦。
1:米1.5杯,水1.75杯;
2:里脊肉200克, 生抽酱油 1茶匙,老抽酱油1茶匙,头抽酱油1茶匙,生粉1茶匙,水1大匙;
3:冰冻白虾8只,盐1/8茶匙,生粉1/2茶匙,白胡椒粉1/8茶匙,香油 1/4茶匙;
4:小胡萝卜1条(40克),青辣椒1/2个(20克);
5:橄榄油2大匙;葱花2大匙,姜蓉1茶匙;
6:盐1/2茶匙, 鸡粉1/6茶匙,白胡椒1/8茶匙,头抽酱油1大匙;
7:香油1茶匙;
8:鸡蛋3只,油1大匙。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、头天将米洗净沥水后连同1.75杯水放入电压力锅内胆里,盖上盖子,排气阀放置密封位置,选【米饭】档。程序完成后,等几分钟,打开盖子,将饭打散放入一盒子里,冰箱冷藏过夜。
2、里脊肉洗净切丁(图1),加上剩余2料(图2),拌匀用手抓捏1-2分钟(图3),再腌15分钟。如果能提前一天准备,放冰箱腌过夜的话,肉会更嫩。虾浸冷水中化冻,剥去皮洗净沥水,放一小碗水里,加剩余3料(图4)拌匀待用。胡萝卜刮去皮,洗净擦丝(图5),辣椒切细丁。
3、 不粘锅置炉上开大火,加1大匙橄榄油,放入肉丁和虾仁(图6)炒至肉丁和虾刚熟捞出待用。
4、原锅再加1大匙油,放入5料里葱花和姜蓉(图7)炒香,倒入胡萝卜丝和辣椒丁炒30秒(图8)。倒入冷饭炒匀(图9),调中火,加速有6料炒至米饭软身(图10)。
5、将先前炒好的肉丁和虾仁放入翻炒均匀(图11),淋下香油 1茶匙,炒匀出锅,分成3份。
6、另取一干净不粘锅,放入1大匙油,大中火,打入3个整只鸡蛋(图12)煎至底部焦黄,大白凝固即可,放煎好的鸡蛋放到炒饭上就可以了。炒饭配上嫩鸡蛋,滋味绝妙。
