【素馅青团】

上次回国买了艾草粉带回来,做了素馅的青团,虽然卖相不好,但挺好吃的哈。
用料:
馅:
1:牛油果油 或其他油2茶匙,鸡蛋1个加盐1/4茶匙打散备用;
2:五香豆腐干1块(60克);
3:小香菇6朵;
4:虾皮2大匙;
5:牛油果油1大匙,葱花2大匙,姜末1茶匙,盐1/3茶匙,十三香粉或白胡椒粉1/6茶,头抽酱油2茶匙;
6:香油 1茶匙;鸡粉1/4茶匙,生粉1茶匙;
皮:
7:糯米粉1.25杯(160克),艾草粉2大匙(8克);
8:开水1/4杯(60克),冷水5大匙(75克);
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、香菇提前泡软,洗净切碎丁,豆干也切碎丁(图1)。平底煎锅加2茶匙油,中火倒入1料打散鸡蛋(图2),煎成蛋皮,切碎丁待用。
2、再加1大匙油到锅里,中火炒香葱花姜末(图3),放香菇碎,豆干碎,虾皮(图4)炒1-2分钟,加剩余5料炒匀盛出。再放入蛋皮及6料拌匀成馅待用。
3、糯米粉加艾草粉(图5)拌匀,先加开水60克拌匀再放冷水和成软硬适中的面团(图6),分成12份。取一份面团用手稍揉几下,用手捏出凹槽,加1大匙馅(图7),封口包好,放在铺了烤盘纸的蒸笼里(图8)。
4、水开后上锅蒸10分钟即可。
