【红糟烧小排】

儿子在家,肉菜一定是要的。上次毛毛爸和毛毛从国内回来买到了非常好的5年的红糟,非常香,颜色呈玫瑰红的。加了一勺烧小排,好味道。
用料:
1:猪小排或肋排1000克;
2:金钱香菇15朵,黑木耳15克;
3:橄榄油1.5大匙;葱1条洗净切段,姜2-3片,八角1粒,丁香2粒;
4:红糟1大匙,糖2茶匙, 生抽酱油 1大匙,头抽酱油1大匙,老抽酱油1大匙,黑醋2茶匙,水1.5杯,盐1/4茶匙;
5:香油 1/2茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、香菇和黑木耳提前用冷水泡几小时(图1),洗净待用。将排骨背面的筋膜撕掉,排骨切开洗净待用(图2)。
2、不粘锅置炉上开大中火,加1大匙橄榄油,放入3料里的葱段,姜片,八角,丁香炒约30秒(图3),放入排骨(图4)炒至焦香。
3、依次放入4料的调味料(图5),翻炒几下。盖盖调中小火焖煮1小时10分钟。想快点的话,如果有电高压锅,就将所有排骨连汁转入电压力锅内胆里,盖上盖子,排气阀放置密封位置,选【手动】档25分钟。
4、然后放入泡好洗净的黑木耳和香菇,煮20分钟(图6),打开锅盖调大中火,煮至汁浓。淋下香油 1/2兜匀就可以出锅了。
