【腰果鸡丁】

这款腰果鸡丁是用鸡胸肉做的, 做法得当, 鸡肉也非常嫩, 很受领导的欢迎.
1:鸡胸肉2块450克;
2: 盐1/2茶匙,生粉2茶匙;
3:无盐熟腰果仁1/2杯(75克);
4:葱一根,生姜3-5克;
5:牛油果油 或其他素油1.5大匙;
调味汁:
6: 头抽酱油1大匙,老抽酱油1.5茶匙, 葡萄醋1.5茶匙,红糖1茶匙,香油1茶匙, 白胡椒1/6茶匙, 鸡粉1/4茶匙, 水1大匙,放一小碗里拌匀.
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。

1、葱去根洗净切片待用. 姜也切片.鸡胸肉剔去白筋, 切1厘米大小的丁. 然后给鸡肉做个按摩, 抓捏2分钟, 这样肉会很嫩 (图1). 加2料拌匀(图2), 待用。
2、调味料汁:所有6料放一碗里拌匀(图3), 待用.
3、不粘锅,置炉上开大中火,加牛油果油1.5大匙,油稍热, 放入葱姜翻炒30秒(图4), 然后下鸡丁翻炒至鸡肉外面变白(图5).
4、放入腰果炒20秒, 接着倒入所有6料的调味汁(图6),炒拌均匀出锅。鸡肉鲜嫩,腰果酥脆很好吃.
