用料:
面团:
1:中筋面粉2杯(all-purpose flour,320克),盐1/2茶匙,拌匀;
2:开水2/3杯+2茶匙(170克),冷水3大匙(45克);
3:牛油果油 或玉米油1大匙;
肉馅:
4:猪肉馅200g(Costco, extra lean ground pork);
5:葱3根,去根洗净切葱花,姜末1茶匙;
6:盐1/3茶匙, 香油 1大匙,鸡粉1/4茶匙,十三香粉或白胡椒粉1/4茶匙,生粉1大匙;
7:头抽酱油 1大匙,生抽酱油1大匙;
8:水4大匙(60克);
其他:
9:玉米油或牛油果油 4大匙,煎饼用.

注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。

做法:
1、面团:盆内放入1料的面粉后,慢慢加入2料的开水并边搅拌,然后放入冷水合成大块面团(图1)。加3料玉米油1大匙,揉成光滑面团,(图2),盖上保鲜膜室温醒发30-60分钟。
2、肉馅:取一干净的盆,放入所有4-7料(图3),用一筷子顺一个方向搅拌均匀,然后便加8料里的水边继续搅拌至馅上劲即可。

3、将醒好的面团稍揉下,分割成4等份。每份揉圆压扁,擀开成30厘米直径的薄皮(图7),放上1/4份的肉馅,摊平覆盖住一半圆(图4),将另一半饼皮对折覆盖肉馅(图5),捏紧边。依次做完所有的饼。
4、【AirGo】插上电源,用“Function”选“Crepe/Nann”,温度400F时间16分钟,然后点“Start”。锅预热结束打开盖子放2大匙油,然后放入2个饼(图6),盖上盖煎。
5、大约10分钟后翻转提示,将饼翻转一面(图7),盖上锅盖让程序继续。程序结束即可盛出饼,切块趁热吃,味道超好。
6、依次做好另外的饼,可以冷冻存储,想吃时再剪。
