【酱烧茄子虾】

挺下饭好吃的一个菜,而且比较快速。
用料:
1:冰冻中号白虾30个,盐1/2茶匙,白胡椒1/8茶匙,生粉1茶匙,香油1/2茶匙;
2:长条茄子4根430克
3:橄榄油2大匙;葱花1大匙,蒜蓉1大匙;
4:辣豆瓣酱1大匙,头抽酱油1大匙,糖1/2茶匙, 十三香粉 1/6茶匙,鸡粉1/6茶匙;
5:香油 1/2茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、虾放半池冷水中化冻,去壳去肠泥洗净。沥水后放一碗里,加剩余1料拌匀腌20分钟待用(图1)。茄子去蒂洗净,横切3等长段,再竖切成6等长条待用。
2、不粘锅置炉上开大中火,加1大匙橄榄油,放入虾仁八成熟(图2),捞出待用。
3、原锅再放1大匙橄榄油,中火。放入3料里的葱花和蒜蓉炒香。放入茄条翻炒2分钟(图3),再放入辣豆瓣酱再炒1分钟。
4、依次加入调味4料,中火炒至茄子软身(图4),倒入先前炒好的虾仁(图5)淋下香油 ½茶匙,兜匀就可以出锅了。
