【鱼香肉丝】

下饭美味的家常菜,中午带饭也很好。
用料:
1:里脊肉300克,盐1/2茶匙,生粉1.5茶匙,水2大匙;
2:干黑木耳10片,罐头笋丝50克;
3:橄榄油1.5大匙;红油 1大匙
4:葱花1.5大匙,姜茉1大匙,蒜蓉1大匙,泡辣椒1大匙斩茸;
5:调味汁:绍酒1大匙,米醋2茶匙,糖4茶匙,头抽酱油 1大匙,万字牌生抽酱油1大匙, 鸡粉, 1/4茶匙,生粉1.5茶匙;
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、里脊肉切丝,加上剩余1料(图1),拌匀用手抓捏1-2分钟,静置20分钟(图2)。如果能提前一天准备,放冰箱腌过夜的话,肉会更嫩。提前将黑木耳水里泡发,洗净,水里煮几分钟(图3),冲冷水沥水切丝待用。5料调味料放一碗里拌匀。
2、 不粘锅,置炉上开大中火,加橄榄油1大匙,然后放入肉丝(图4)翻炒至肉丝刚变白7成熟,捞出待用。。
3、原锅放0.5大匙橄榄油和1大匙红油,炒香4料的葱花,姜茉,蒜蓉和泡辣椒(图5),放黑木耳丝和笋丝(图6)翻炒几下。
4、放入炒过的肉丝炒几下(图7),下5料拌匀的调味汁(图8),炒至汁浓,即可盛出即可上桌了。
