【鸡蛋葱花饼】

用料:
面团:
1:中筋面粉2杯(all-purpose flour,320克);
2:开水2/3杯+2茶匙(170克),冷水3大匙(45克);
3:牛油果油 或玉米油1大匙;
油酥:
4:中筋面粉3大匙(30克),玉米油2.5大匙(30克);盐1茶匙,鸡粉1/4茶匙,十三香粉1/4茶匙;
其他材料:
5:葱2根,去根洗净沥水切葱花;
6:鸡蛋2个,盐1/3茶匙;
7:玉米油或牛油果油 4大匙,煎饼用.
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、面团:盆内放入1料的面粉后,慢慢加入2料的开水并边搅拌,然后放入冷水拌匀(图1)。加3料玉米油1大匙,揉成光滑面团,面团上面涂抹1/2茶匙油,盖上保鲜膜(图2),室温醒发2小时。
2、油酥:将4料放入小盆里,充分拌匀(图3)待用。
3、案板稍微撒涂点油,将面团分成4等份,取一份擀成长方形薄饼,放入1/4量的油酥(图5)均匀抹在擀开的水皮上,从左端往右端卷成筒(图6).
4、卷面朝上稍压扁,盖上保鲜膜醒20分钟(图7)。将鸡蛋,盐1/3茶匙,葱花放一碗里打散待用(图8)。
4、【AirGo】插上电源,用“Function”选“Crepe/Nann”,温度400F时间25分钟,然后点“Start”,程序自动进行。将饼擀成22厘米薄饼(图9)。锅预热结束打开盖子放1大匙油,然后放入饼(图10),盖上盖煎1-2分钟。
5、打开锅盖,倒入1/4蛋液(图11)煎1分钟(图12),然后将饼翻转一面再煎1分钟,即可盛出。依次做好剩余的饼,趁热吃,味道超好。
