用料:
黑豆馅:
1:黑豆一包(454克),水2杯;
2:白糖1杯(205克)想甜点的用1.5杯, 香草香精1大匙,玉米油或素油1/3杯(70克);
饼皮:
3:小苏打(baking soda)1/3茶匙,水2茶匙;
4:转化糖浆1/2杯+2茶匙(130克),玉米油3.5大匙(40克);
5:中筋面粉(all purpose flour)1杯+2大匙(180克);
蛋液:
6:鸡蛋黄1个,加水1大匙拌匀。
以上皮料可做15个22克重的月饼皮,馅料可以做13个80克的馅。转化糖浆:做法见 月饼集锦
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。
做法:
1、黑豆馅:黑豆洗净,放入电压力锅内胆里(图1),加水到4杯线,盖上盖子,排气阀放置密封位置,选【手动】档55分钟。程序完成后等5分钟,放气打开盖子(图2)。
2、煮好的黑豆稍冷后,分批加点水打成蓉(图3)。RoPot自动炒菜机插上电源,按开关键,预热后。豆蓉放入RoPot自动炒菜的内锅里,用Function键选 Manual键再按Stir,再按+键将时间增加到20分钟(图4),程序自动进行了。

3、等第一次程序完成,放入2料(图5),打开盖子再选Manual+Stir,再按+键将时间增加到30分种,炒至馅成团没有什么水汽即可(图6)。
4、待馅冷凉后,然后称量80克的馅,揉成球备用。我是当天炒好馅就做月饼,将以将做好的豆沙球放入冰箱冷藏30-60分钟,做月饼时比较好操作。
5、豆沙月饼:将3料放一盆里拌匀,然后放入4料的转化糖浆及玉米油拌匀(图7),然后放入5料的面粉,用橡皮刀拌成软面团(图8)。盖上保鲜膜静置0.5~1小时。

6、面团分割成小份,每份22克,手掌放一份月饼皮,两手压压平,上面放一份馅(图9)。一只手往下轻推月饼馅,另一只手的手掌轻推月饼皮,使月饼皮慢慢展开,直到把月饼馅全部包住为止(图10)。
7、包好的月饼表皮轻轻的抹一层干面粉,把月饼坯放入月饼模模型中,轻轻压下(图10),推出月饼,放入铺了烤盘纸的烤盘里(图11)。依次做完所有的月饼,用刷子轻轻刷去表面的面粉。
8、放入预热至395F/200C的烤箱内,烤6分钟后,拿出刷上蛋液(注意要少少量)(图12),温度调到340F/170摄氏度烤7分钟。然后拿出再刷一次蛋液,再烤5分钟,最后开上火低档(Broil Low)2~5分钟上色即可(图13)。各家的烤箱不同,注意调整温度及时间。月饼冷凉后,一定要放入密闭盒里回油1-2天再吃。

爱心分享:
1、月饼馅一定要炒干,否则烤月饼时会造成变形,开裂破皮。
2、刷蛋液一定每次少少量,这样花纹会比较清晰。
