【AirGo之鲜肉月饼】

用料:
水皮:
1:中筋面粉2杯(all purpose flour,320克);
2:牛油果油 6大匙(64克),水3/4杯(180克);
油皮:
3:低筋面粉(cake & pastry flour)1杯+5大匙(190克),牛油果油1/2杯(100克);
馅:
4:瘦肉馅320g;
5:香辣笋一包(180克),切碎;
6:生粉2茶匙,盐1/2茶匙,鸡粉 1/6茶匙,白胡椒1/6茶匙,香油1大匙,头抽酱油1大匙,生抽酱油1大匙, 糖1/6茶匙,水2大匙;
7:葱2根洗净切葱花;
其他:
8:牛油果油 2×1.5大匙.
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。以上材料可以做20个酥皮月饼。
做法
1、水皮:将1-2料放一盆里(图1),揉成均匀的软面团(图2),盖上保鲜膜保湿静置20分钟。
2、油皮:将3料放一小盆中(图3),用勺拌匀成非常软的油皮(图4),待用。
3、馅: 将所有4-7料放入一小盆里(图5),这次我用的是这个笋(图6). 用筷子顺一个方向搅拌至馅上劲,待用。
4、手上和案板上稍涂点玉米油,然后将水皮面团分成20小份。做的过程要用保鲜膜盖住其他的皮料保湿。取水皮一份擀成长圆形薄饼,将大约1/20量的油皮(大约1.5茶匙)均匀抹在擀开的水皮上(图9),两端叠向中间三褶(图10)。
5、转90度擀开成长方形(图11),再将两端叠向中间三褶(图12),然后擀开成一薄的长方形(图13),从左往右卷成圆筒(图14),再从下往上团成小球状(图15),保湿静置松弛10分钟。
6、压扁小球擀成圆饼(图16),放上1.5大匙馅(图17),收口包好(图18),然后翻转放案板上, 压扁成圆饼状(图19)。依次做好其他的月饼.
7、【AirGo】插上电源,用“Function”选“Crepe/Naan”然后选择400F及16分钟,点“Start”预热。放入1.5大匙油刷匀, 放入10个鲜肉月饼 (图20), 盖上盖让程序继续。
8、程序进行到还有5-6分钟后或提醒翻转时,打开盖子,翻转一面,盖上盖继续(图21), 让程序完成。盛出鲜肉月饼稍冷就可以吃. 依次做好下一批.
爱心分享:鲜肉月饼可放入密闭盒子,放在冰冻箱储存。吃的时候从冰冻箱拿出,用微波炉加热30秒后,再放入350F/175摄氏度烤箱里烤5分钟,晾凉后食用,酥香咸鲜。
