虾猪肉丸:
1: 冰冻去壳带尾虾 (21-25大小)450克, 精瘦猪肉馅525克;
2: 葱4根切葱花, 姜2克切末;
3: 李锦记红油豆瓣酱1大匙, 香油1大匙,盐1茶匙, 十三香粉1/2茶匙, 鸡粉1/2茶匙, 生粉1大匙, 头抽酱油2大匙, 头抽酱油1大匙, 鸡蛋1个, 水2大匙,;
其他:
4: 橄榄油或其他油1大匙, 葱花2大匙, 姜2克切片, 蒜蓉2茶匙, 李锦记红油豆瓣酱1.5大匙, 花椒粉1/4茶匙;
5: 老豆腐一盒700克, 魔芋一盒400克, 什锦蘑菇一盒400克;
6: 头抽酱油2大匙, 生抽酱油1大匙, 李锦记蚝油1.5大匙, 鸡粉1/4茶匙;
7: 香油1/2茶匙.
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法
肉丸:
1、 虾冷水化冻去尾洗净切成肉糜(图1), 将所有1-3料放一盆里(图2), 用一双筷子顺一个方向搅拌至少70-80下,至馅上劲待用。蘑菇切去根洗净(图3)切小片待用。魔芋(图4)泌去水冲洗下待用。豆腐冲水后(图5)切2厘米大小厚0.3厘米薄片待用。
2、一大张烤盘纸刷上1茶匙油,用一小汤勺先沾下水,舀出大约1大匙馅,右手持勺,与左手掌配合,搓成直径2厘米的丸子放在烤盘纸上(图6),一次做好16个丸子。
3、【AirGo】插上电源,用“Function”选“Air Fryer”然后选择410F及7分钟,点“Start”. 盖上锅盖。预热结束, 打开锅盖, 将丸子连同烤盘纸放入锅内(图7), 盖上锅盖, 让程序继续进行。程序结束将丸子(图8)连纸拿出保温待用。剩余的虾煮肉馅可以分2批做好,冷冻起来以后煮菜用。
4、【AirGo】用“Function”选“Air Fryer”然后选择410F及18分钟,点“Start”,锅内放入1大匙油及4料里的葱花姜片及蒜蓉,盖上锅盖预热。预热结束放入4料里的辣豆瓣酱及花椒粉 (图9),然后放入豆腐片(图10)轻轻翻炒几下, 盖上锅盖让程序继续。
5、2分钟后放入剩余5料(图11) 轻轻翻炒几下, 盖上锅盖让程序继续. 等还剩10分钟, 打开锅盖放入6料(图12)及之前炸好的16个丸子, 轻轻翻炒几下, 盖上盖子. 等程序完成,放入香油1/2茶匙, 轻轻翻炒几下, 即可盛出, 趁热吃, 很好吃.
