【山药鸡块】

毛毛爸和毛毛最近一次从国内回来买到了非常好的5年的红糟,非常香,颜色呈玫瑰红的。做了这个山药鸡块非常好吃。
用料:
1:小母鸡(Conish hen)1只800克;
2:橄榄油1大匙,葱1条洗净切段,姜2-3片,八角1粒,丁香2粒,红糟1大匙;
3:老头抽酱油 1大匙,生抽酱油 1.5大匙,头抽酱油1大匙,盐1/3茶匙,糖1茶匙,水1.5杯;
4:山药1小根400克。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、将小母鸡洗净去掉多余的皮和油,斩成小块(图1)待用。
2、 不粘锅,加1大匙油,大火放入葱段,姜片,八角,丁香及红糟炒香(图2)。然后放入鸡块(图3),再翻炒2-3分钟。
3、依次放入所有剩余3料(图4)。盖上盖子,调中小火焖煮25分钟,间中翻一翻。趁空档,山药去皮,切0.8厘米厚片,再对半切块(图5)。
4、小火焖煮25分钟后打开盖子,放入山药块(Picture 6),调中火煮3-5分钟至浓稠,即可盛出上桌了。
