【凉拌黄瓜金针菇】

大热天,来盘凉拌菜,开胃爽口。
用料:
1:大黄瓜1条425克,盐1/2茶匙;
2:金针菇2包共400克;
3:红油1.5大匙,蒜蓉1大匙,葱花1大匙;
4:盐1/3茶匙,葡萄醋(balsamic vinegar )或老陈醋2茶匙,糖1/3 茶匙,头抽酱油2茶匙, 鸡粉1/6茶匙,白胡椒1/6茶匙;
5:香油 1茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、黄瓜刨去皮(也克不去皮)洗净切丝,加上剩余1料,拌匀,静置20分钟(图1)。金针菇切去根洗净,烧开一锅水,将金针菇在开水里烫烫(图1),捞出后冲冷水沥水待用。
2、 不粘锅置炉上开中小火,加红油1.5茶匙,放入葱花蒜蓉炒1分钟至香味出来(图3),离火待用。
3、将黄瓜丝稍微挤去水,放一干净锅里,放入烫好的金针菇,放入红油炒过的葱花蒜蓉,及所有4和5料,拌匀即可上桌。
