简单味美-【咖喱虾仁炒饭】

每个星期都做蛋炒饭,毛毛有点吃腻了。今天换了口味做了咖喱虾仁炒饭做午餐,出乎意料的是他居然喜欢吃咖喱风味。
用料:
1:300毫升米,360毫升水;
2:冰冻白虾仁200克,盐1/4茶匙,生粉1茶匙;
3:大号鸡蛋1个,盐1/8茶匙,橄榄油1茶匙;
4:紫洋葱1/2个(85克),去外皮洗净切小丁待用;
5:1/2杯冰冻青豆(55克),1/2杯冰冻玉米粒;
6:橄榄油4.5茶匙,葱花1.5大匙,姜蓉1茶匙,咖喱粉1茶匙;
7:盐1/2茶匙,鸡粉1/4茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、小锅置炉上,放入360毫升水,水滚后放入洗净沥干的米搅拌几下,调最小火焖煮35分钟就好了。最好提前一天将饭做好,放入冰箱冷藏。
2、虾仁去肠洗净沥水,拌上所有剩余的2料(图1),用手抓捏均匀,静置20分钟。
3、不粘锅置炉上开中火,放1茶匙橄榄油。鸡蛋1个加1/8茶匙盐打匀,倒入锅里(图2)炒至鸡蛋凝固成块盛出待用。玉米粒及青豆放一碗中,微波炉加热2分钟待用。
4、原不粘锅加1.5茶匙橄榄油,开大中火炒至虾仁八成熟(图3),捞出待用。
5、原不粘锅内再放橄榄油2茶匙,置炉上开大火,炒香6料里的姜丝和葱花(图4),然后下咖喱粉和洋葱丁炒1分钟(图5)。
6、倒入冷饭,调中火炒至米饭软身(图6),加7料炒匀。然后加入热好的青豆和玉米粒(图7)炒匀,最后放入炒好的鸡蛋及虾仁(图8),翻炒一分钟,盛到盘子中,再撒少量葱花。
