【柠香奇雅子松饼】

几个月前一位朋友向我介绍了神奇的健康食品:奇雅子(Chia seeds)。它营养丰富,富含52种营养元素,蛋白质、钙、铁、omega-3、纤维,以及十余种抗氧化物。食用奇雅子可以起到代餐减肥、持续供能、润肠通便的作用,补充膳食纤维和omega-3等多种营养。它能防止餐后血糖升高,对II型糖尿病有帮助。
由于是薄荷类植物,奇雅子自然抗虫,而且在荒漠地带不需要施加肥、是100%的绿色植物,再加上它没有任何异味,无需加工即可随意食用。奇雅子富含天然抗氧化物,多年存放亦不会腐坏变质,这同时对omega-3脂肪酸也起到了很好的保护作用。我用奇雅子做了这款清香松软的松饼(pancake)做早餐,全家都很喜欢。
用料:
1:中筋面粉1杯(160克),全麦面粉1/2杯(80克);
2:白糖3大匙(42克);
3:泡打粉2茶匙(8-9克),盐1/4茶匙;
4:一个柠檬的皮碎,奇雅子1.5大匙;
5:新鲜柠檬汁1.5大匙,玉米油1大匙,1盒希腊酸奶(114克);
6:杏仁奶或低脂牛奶1杯(240克),香草香精1茶匙(5克);
7:大鸡蛋2只。
以上材料做8个中号松饼。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、将所有1-4料放一盆里(图1),用一叉子拌匀(图2)待用。将所有5-7料放另一干净盆中(图3),我用的是这个酸奶(图4),用打蛋器(handheld mixer)高速打2分钟到均匀(图6)。
2、将打匀的奶蛋液倒入充分混合均匀的1-4料(图7),用打蛋器中速打60秒,至均匀(图8)。
3、不粘锅置炉上开中火,用软纸巾沾少量油,在锅的里面涂一圈。等锅热后放入1/4杯面糊(图9),等大约2分钟煎黄一面,用锅铲小心翻转,煎黄另一面即可(图10)。
4、依次煎好剩余的松饼,上面放些喜欢的水果如蓝莓等,浇上枫糖浆食用。
