Party零食之【糖衣山核桃】

山核桃仁一直是我们家party零食的最爱,它的口感香脆,比杏仁略胜一筹。今天来做一个甜味的,方子参考了http://allrecipes.com/recipe/230557/candied-pecans/ 我将水换成香草香精,糖与盐的用量减到更适合华人口味。
你也可以用核桃仁来做,唯一不同的是核桃仁油性大,烤的温度略高些,用275F烤同样的时间
1、Costco买的美国山核桃仁(pecan halves)一磅454克;
2:鸡蛋清1个,香草香精1大匙;
3:白糖1/4杯,红糖1/4杯,盐1/3茶匙,肉桂粉1/2~2/3茶匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、烤箱提前预热至255F,将13×18英寸的大号烤盘铺上烤盘纸(parchment paper),待用。
2、在9英寸的中号不锈钢盆里放入2料(图1),用电动打蛋器打至发泡(图2)。
3、将一磅山核桃仁倒入盆里(图3),用木勺拌匀,这时盆中不应有多余的液体。
4、将所有3料放在另外一小号盆里(图4)拌匀(图5),分4次均匀撒在山核桃仁上(图6),每撒一次就将盆上下颠簸几下,让山核桃仁均匀沾上调味料。
5、将山核桃仁尽量在烤盘上摊开摊匀(图7)。放入烤盘烤65-70分钟,中间每隔30分钟用木勺翻动,并将粘在一起的山核桃仁分开。
6、山核桃仁取出晾凉1-2小时后,装入玻璃瓶中,放冰箱保存。
