【桃子乳酪蛋糕】

在网上看到这款波兰桃子乳酪蛋糕,就非常想试试。可惜原方不是英文,用谷歌英文翻译得了方子,有点似是而非,只好加上自己的发挥了。乳酪蛋糕成品真是太棒了,滋味美妙,超好吃。毛毛连着吃了两块还意犹未尽,亲们要试试。
用料:
糕底:
1:中筋面粉2又3/4杯(440克),白糖3大匙(42克),泡打粉2茶匙(9克);
2:牛油3/4杯+1.5大匙(200克),切小块,先放冰箱冷藏;
3:特大鸡蛋蛋黄4个;
馅:
4:原味乳酪(Kraft PHILADELPHIA cream cheese)500克,白糖1/2杯(105克),特大鸡蛋蛋黄1个,特大鸡蛋1个;
5:桃子罐头1罐(796毫升),取出桃子切片;
蛋白层:
6:特大鸡蛋蛋清5个,白醋1/2茶匙或塔塔粉1/3茶匙,糖2/3杯(140克);
其他:
22×32厘米玻璃烤盘。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升
做法:
1、将所有1料放一盆里拌匀,放入冻硬的小块牛油(图1),用手将面粉抓捏到油里成肉馅样(图2),但不要揉捏过度。放入4个蛋黄(图3),用叉子拌匀(图4)成糕底粉。
2、22×32厘米的玻璃烤盘喷点防粘油Pam,放入步骤1中的糕底粉的三分之二,用手均匀压平底部,周边高出1-2厘米(图5)。
3、将所有4料放一盆中(图6),用打蛋器(handheld mixer)高速打2-3分钟至均匀(图7),将打匀的乳酪均匀铺在糕底粉上(图8)。
4、预热烤箱350F/176摄氏度。将桃子片均匀铺到乳酪馅上(图9)。5个蛋清放入一干净干燥的盆里,加白醋1/2茶匙或者1/3茶匙塔塔粉,用干净无水的打蛋器高速打2-3分钟,然后边打边加入2/3杯匙糖(图10),继续高速打3-5分钟至挺。
5、将打发蛋白铺匀到桃子片上(图11),再撒上剩余的三分之一糕底粉(图12)。
6、烤盘放入预热至350F/176摄氏度的烤箱内,烤45分钟左右,至表面金黄色拿出。等乳酪蛋糕冷凉至室温,切成24等块食用。
