简易【猪肉烧卖】

猪肉烧卖也是我们去中餐馆饮茶必点的一款,自己在家也可以做哈。
用料:
1:五花肉200克或猪肉馅200克;
2:荸荠8-9个,去皮洗净切小粒;
3:绍酒1茶匙,葱花1大匙,姜蓉1/2茶匙,盐1/4茶匙,糖1茶匙,生抽酱油1茶匙,老抽酱油1茶匙,李锦记旧庄特级蚝油 2茶匙,生粉1大匙,鸡粉1/6茶匙(没有的话可以不用),白胡椒粉1/8茶匙,香油1大匙,水1.5大匙。
4:馄饨皮12张。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、五花肉洗净后,切丁斩碎放入盆里,加入所有的2料和3料(图1),然后用一双筷子顺一个方向搅拌,至馅粘稠上劲。
2、取一张馄饨皮,放1.5大匙肉馅(图2),拉起边缘捏紧,包成上端开口的烧卖坯(图3)。
3、蒸锅里放4杯水,置炉上开大火。烧卖底部垫上小块烤盘纸,放在笼屉上(图4),等水滚开后,将盛烧卖的笼屉放入蒸锅,再用大火蒸8分钟(图5)即可。
