【绿豆酥】

很久没有做酥皮点心了,做了这个绿豆酥,挺不错的,你也可以试试。
水皮:
1:中筋面粉1杯(All purpose flour,160克),油酥(Lard)3.5大匙(52克),糖1.5大匙(20克);
2:水4大匙(60克);
油皮:
3:低筋面粉(Cake and pastry flour)3/4杯(113克),绿茶粉1大匙(5克),油酥(Lard)4大匙(60克);
绿豆馅:
4:去皮干绿豆半袋200克,水2杯(500克);
5:白糖1/2-3/4杯(104-160克),玉米淀粉(Corn starch)1.5大匙,炼乳2大匙,玉米油1/4杯(50克);
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。以上材料可以做16个绿豆酥。
做法:
1、绿豆蓉馅:去皮绿豆洗净放入快煲高压锅里,加水2杯(图5),盖上盖子,排气阀放置密封位置,选【手动】档25分钟。程序完成后冷凉5分钟,放气打开盖子(图2)。
2、将煮好的绿豆转入 不粘锅里(图3),加所有5料,中小火炒至馅成团干挺,没什么水气了便可(图4)。待馅冷凉后放案板上揉均匀,然后称量16个35克的馅,揉成球备用(图5)。
3、水皮:将1料里的面粉放入盆里,将油酥切小方块放入面粉里,然后倒入2料(图6),用叉子兜匀成较大块。手上撒点面粉,将水皮在撒了稍许面粉的案板上揉几下成面团(图7),然后保湿静置20分钟。
4、油皮:3料里的面粉和绿茶粉,放一干净盆里(图8),用叉子拌匀,放入切成小粒油酥,揉捏成软面图待用。
5、将水皮(图9)和油皮(图10)个分割成8等份揉圆。将水皮擀成圆形薄饼,放上一粒油皮球(图11)。慢慢收拢包裹住油皮球(图12)。依次做好剩余7份。
6、做的过程注意其他的要盖上保鲜膜保湿。包好的水油皮压扁,擀成长长椭圆形(图13),从底部往上卷成筒(图14)。依次做好所有水油皮。盖上保鲜膜静置10分钟。收口朝上将(图15),擀成椭圆形(图16),再从底部往上卷成筒(图17)。盖上保鲜膜静置10分钟。
7、取一个卷筒中间切开(图18),压扁(图19),然后擀成直径7厘米的圆饼。反面后放上一个绿豆馅球(图20),包裹住绿豆馅球(图21),收口朝下放入铺了烤盘纸的烤盘里(图22)。
8、将烤盘放入已预热至350F/180C的烤箱内,烤35分钟即可。
