【覆盆子乳酪蛋糕】

我们家毛毛最喜欢乳酪蛋糕,今天做了这个Mini 覆盆子乳酪蛋糕,他很喜欢。亲们也试试吧。
用料:
糕底:
1:中筋面粉3/4杯(120克),白糖2大匙(28克),泡打粉1/3茶匙;
2:牛油4.5大匙(67克)切小块;
3:鸡蛋黄1个,香草香精1/2茶匙;
乳酪馅:
4:奶油奶酪(Kraft PHILADELPHIA cream cheese)1杯(240克),新榨柠檬汁1大匙,糖1/2杯(105克);
5:特大鸡蛋1个,蛋清1个;
覆盆子浇汁:
6:新鲜覆盆子1杯,糖3大匙(42克);
7:1/2 茶匙生粉,加1大匙水拌匀。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
做法:
1、将1料中的面粉、糖和泡打粉放一盆里拌匀,放入切成小块的牛油(图1),用手将面粉抓捏到油里成肉馅样(图2),不要揉捏过度。将蛋黄和香草香精放入小碗中(图3)打散拌匀,均匀倒入面粉牛油混合物里,用叉子拌匀成糕底粉(图4)。
2、将12个纸烤杯放在麦芬烤盘里,将步骤1中的糕底粉,均匀分到12个纸杯里(图5)铺平待用。烤箱预热至375F/190摄氏度,将盛糕底的麦芬烤盘放入烤10分钟。
3、乳酪馅:将所有4料放一盆中,用打蛋器(handheld mixer)高速打2-3分钟到蓬松。(图6)。然后放入5料的鸡蛋和蛋清(图7),再高速打2分钟至浓稠均匀(图8)。
4、将乳酪馅均匀分到已经烤了10分钟糕底上(图9),调整烤箱温度至340F/170摄氏度,放入烤盘,再烤18分钟。
5、覆盆子浇汁:将所有6料放一小锅里,中火煮滚,然后煮5-8分钟(图10),放入7料的生粉水煮至汁浓离火。
6、烤好的mini乳酪蛋糕冷凉后,浇上一大匙覆盆子汁,就可以吃了。
