【玫瑰黑芝麻馅烧饼】

家里还有些玫瑰花酱,今天做了这款甜点烧饼,真是外酥里糯好好吃。
发面皮:
1:中筋面粉(All purpose flour) 1又3/4杯(280克,面没筛过,是从面粉袋里直接舀的);
2:不烫手的温水3/4杯+4茶匙(200克),糖1茶匙,快速发酵粉(Fast Rising Yeast) 1.25茶匙,面粉2茶匙,搅拌均匀,静置10分钟;
3:玉米油1茶匙。
油皮:
4:中筋面粉3/4杯-2茶匙(110克),玉米油5大匙(67克);
其他材料:
5:白芝麻1/2杯;
玫瑰黑芝麻馅:
6:熟黑芝麻1杯110g;
7:玫瑰花酱150克;
8:糖粉3大匙(25克);
9:面粉2大匙(28克)。
注:1大匙=1tbsp=15毫升,1茶匙=tsp=5毫升,1杯=1cup=240毫升。
以上材料做10个玫瑰黑芝麻馅烧饼。
做法:
1、面团:盆内放入1料的面粉后(图1右)加入2料(图1左)揉成软面团。这时面团会粘手,加3料玉米油1茶匙,揉均匀(图2),放在暖和的地方保温保湿发酵。
2、油皮:将4料放入小盆里拌匀(图3)待用。
3、玫瑰黑芝麻馅:黑芝麻放一塑料袋里封口用擀面杖将芝麻压碎(图4),连同7-9料放入一盆里(图5)拌匀,将馅分成10份,捏成球状待用(图6)。
4、等到面团发至原来的两倍大。案板和手上涂些玉米油,将发好的面团分成10等份,取一份擀成长圆形薄饼,取1/10量的油皮均匀抹在擀开的水皮上(图7)。从一端卷成筒(图8),转90度压扁后再擀开(图9)。两端往中间叠三折(图10)。转90度擀开成长方形(图11),从上往下卷成圆筒(图12),再从一端往上卷成小球状(图13),保湿静置松弛10分钟。压扁小球擀成圆饼,放上一粒玫瑰黑芝麻馅球(图14),收口包好(图15)。放入盛白芝麻的小碗里沾上一面芝麻(图16),然后翻转放案板上(图16),压扁擀成8-9厘米圆饼状(图17)。
5、做好的玫瑰黑芝麻馅烧饼坯放入铺了烤盘纸的烤盘里(图18),放入预热至375F/190摄氏度的烤箱里,烤20到22分钟即成。各家的烤箱不同,注意温度及时间。若是烤22分钟后还不上色,开上火Broil档2到3 分钟。
6、烤好的玫瑰黑芝麻馅烧饼稍冷即可食用。
玫瑰黑芝麻馅烧饼一次吃不完的话,可以放冰箱或冰冻室存放。吃的时候在微波炉里热15-20秒后,再放面包炉(Toaster)里用低热档烤一下,你就可以吃到跟新鲜出炉一样的酥、松、香的烧饼了。是一款绝好的早点及茶点。
