【虾仁炒蛋】

最近买的冰冻虾仁虽然不是很大,却很新鲜嫩滑,用鸡蛋来炒,就是简单美味的一个快手菜。
用料:
1:冰冻白虾仁半包200克;
2:盐1/4茶匙,白胡椒粉1/8茶匙,生粉1茶匙,香油1/2茶匙;
3:大鸡蛋3个,盐1/3茶匙, 鸡粉1/6茶匙,水1大匙;
4:橄榄油2.5大匙,葱花3大匙。
注:1大匙=15毫升=1 Tbsp,1茶匙=5毫升=1 Tsp,1杯=240毫升。
做法:
1、早上上班前将冰冻白虾仁放冰箱里解冻,下班回来洗净沥水,放入容器里。加所有2料(图1)拌匀,腌15分钟。鸡蛋同其他3料放一碗中打散待用(图2)。
2、不粘锅加1大匙橄榄油,置炉上开大火,放入虾仁(图3),炒至7成熟捞出待用。
3、原不粘锅开大中火,加1.5大匙油,放入3大匙葱花炒香(图4),然后倒入蛋液(图5)。
4、待蛋液底部开始凝固后,倒入炒过的虾仁(图6),用铲子轻轻翻炒均匀至蛋液刚刚凝固,就可以盛盘上桌了。
