【Shrimp Egg Rolls】

This is another way to do stir fried shrimp with eggs, a more attractive presentation that kids will love.

Prepare time: 15 minutes
Cook time: 10 minutes
Stand time: 20 minutes
Level: Medium
Serves: 4 servings

Ingredients:

1) 12 medium or large size tiger shrimps;
2) 1/4 tsp salt, 1/8 tsp white pepper powder, 1 tsp corn starch, 1/2 tsp sesame oil;
3) 4 extra large eggs, 1/2 tsp salt, 1 tsp cooking wine, 1 tbsp water, 1.5 tbsp freshly minced green onion;
4) 3 tbsp olive oil.

Directions:

1: Remove shell and devine the shrimp, rinse under water and drain. Cut shrimp into small pieces and add all ingredients of Ingredient 2) (Picture 1). Mix well and set aside for 20 minutes (Picture 2).
2: Non-stick frying pan on medium heat, add 1 tbsp olive oil then sauté the shrimp until the color starts to turn red (Picture 3). Remove from the pan and set aside.

3: In a medium size bowl, add all ingredients of Ingredient 3) (Picture 4). Beat with a fork until fully mixed (Picture5). In the same non-stick pan on medium heat, add 1 tbsp olive oil. When oil is hot, add half of the beaten egg. When the egg starts to solidify, place half of the cooked shrimp on top (Picture 7). Carefully wrap around the shrimp to form a roll with two spatulas (Picture 8). Cook both sides until light brown. Repeat the same process with the other half.
4: Slice the rolls into 1 inch long pieces before serving.
