【紫薯酥饼】

做了这个紫薯馅的酥饼,外皮酥,馅子香甜软糯,很受LD的喜爱。亲们一定要试试。
用料:
紫薯馅:
1:紫薯一个240克;
2:糖1大匙,炼乳2大匙,玉米油1大匙;
水皮:
3:中筋面粉1杯(all purpose flour,160克);
4:刚煮沸的开水1/2杯(120克),冷水4茶匙(19克),玉米油1茶匙(4克);
油皮:
5:低筋面粉(cake & pastry flour)1/2杯+3大匙(97克),玉米油1/4杯(53克);
其他:
6:玉米油3大匙。
以上材料可以做12个紫薯酥饼。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、紫薯馅:紫薯去皮洗净切小块,放入一碗中。取出电压力锅附带的支架,放入内胆里,加水到2杯的线。将盛紫薯的碗放在支架上(图1),盖上盖子,排气阀放置密封位置,选【蒸】档10分钟。程序完成后等5分钟,放气打开盖,拿出蒸好的紫薯。放入所有2料(图2),用勺子将紫薯压碎拌匀。如果馅有些稀(图3),放入微波炉里打1分钟,搅拌后再打30秒,每次重复加热30秒后再搅拌,直至馅无水份成块(图4),分成12等份待用。
3、油皮:将5料放一小盆中(图8),用勺拌匀成非常软的油皮(图9)。
5、不粘锅置炉上开中火,放1.5大匙油,油热后放入6个紫薯酥饼(图21),用中火煎4分钟左右,翻转另一面(图22)再煎黄。重复此步骤煎好另外一半的饼。
