【酱炒鸡片】

这款酱炒鸡片是用鸡胸肉做的, 做法得当, 鸡肉也非常嫩, 很入味, 很受领导的欢迎.
1:鸡胸肉2块525克, 生粉2茶匙;
2:红葱头1个(45克),生姜3克切片, 蒜瓣2瓣去皮;
3:牛油果油 或其他素油1.5大匙;
4: 郫县豆瓣酱1大匙,甜面酱1大匙;
5: 头抽酱油1大匙, 香油1茶匙, 白胡椒1/6茶匙, 鸡粉1/6茶匙.
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。
1、鸡胸肉洗净沥水后切片, 用手抓捏2分钟,这样肉会很嫩, 加上剩余1料(图1),拌匀静置15分钟。
2、红葱头剥去皮,切小丁. 姜切片, 蒜瓣去皮拍碎待用.
3、不粘锅,置炉上开大中火,加牛油果油1.5大匙,油稍热, 放入红葱头丁, 姜, 蒜(图2)翻炒30秒(图3), 然后下郫县豆瓣酱和甜面酱(图4) 翻炒30秒. 下鸡片翻炒(图5)1-2分钟.
4、放入所有5料 (图6),炒拌均匀, 鸡肉断生出锅。鸡肉鲜嫩,很好吃.
