【鱼香肉丝】

下饭美味的家常菜，中午带饭也很好。
用料:
1：里脊肉300克，盐1/2茶匙，生粉1.5茶匙，水2大匙；
2：干黑木耳10片，罐头笋丝50克；
3：橄榄油1.5大匙；红油 1大匙
4：葱花1.5大匙，姜茉1大匙，蒜蓉1大匙，泡辣椒1大匙斩茸；
5：调味汁：绍酒1大匙，米醋2茶匙，糖4茶匙，头抽酱油 1大匙，万字牌生抽酱油1大匙， 鸡粉, 1/4茶匙，生粉1.5茶匙；
注：1大匙Tablespoon =15毫升，1茶匙Teaspoon =5毫升，1杯Cup=240毫升。
做法：
1、里脊肉切丝，加上剩余1料（图1），拌匀用手抓捏1-2分钟，静置20分钟（图2）。如果能提前一天准备，放冰箱腌过夜的话，肉会更嫩。提前将黑木耳水里泡发，洗净，水里煮几分钟（图3），冲冷水沥水切丝待用。5料调味料放一碗里拌匀。
2、 不粘锅，置炉上开大中火，加橄榄油1大匙，然后放入肉丝（图4）翻炒至肉丝刚变白7成熟，捞出待用。。
3、原锅放0.5大匙橄榄油和1大匙红油，炒香4料的葱花，姜茉，蒜蓉和泡辣椒（图5），放黑木耳丝和笋丝（图6）翻炒几下。
4、放入炒过的肉丝炒几下（图7），下5料拌匀的调味汁（图8），炒至汁浓，即可盛出即可上桌了。
