【Eggplant stir fry in fermented black bean sauce】
Very tasty dish. The AirGo cooker has “Air Fryer” function, I could “fry” the eggplant with only 1 tbsp oil, very nice. I really like its “Air Fryer” function, to purchase click: AirGo cooker, with a coupon of maomao25 for $25 off.

Serves: 4 servings
1) 4 Chinese eggplants (600g);
2) 1 tbsp avocado oil or olive oil, 1 green onion finely chopped, 3 clove garlic minced, 1 tbsp fermented black bean;
3) 1 tbsp premium soy sauce, 1/4 tsp chicken broth mix, ¼ tsp salt, ½ tsp brown sugar;
5) 1/2 tsp sesame oil.
1: Trim stem off from the eggplants. Rinse, pat dry and cut into small pieces (Picture 1).
2: Plugin the 【AirGo】 cooker, use “Function” to select the “Air Fryer” program, after the preheat done, add eggplant and 1tbsp oil stir to mix (Picture 2), close the lid (Picture 3). Press “Pause” then adjust time to 10 minutes, then press “start” to continue the program. At half way cooking, open the lid and quick stir the eggplant a few times and then close the lid.
3: After “Air Fryer” program done (Picture 4), open the lid, place the stir fry paddle in the center, add all the rest ingredients of Ingredient 3) and Ingredient 4) (Picture 5), close the lid. Use “Function” to select the “Stir Fry” program, once the preheat is done, press “Pause” then adjust time to 3 minutes, then press “start” to continue the program. If you don’t want to switch “Stir Fry”, you could use only “Air Fryer” function but set time for 15 minutes, add all ingredients of 3) and 4) when only 5 minutes left, stir a few times, during the cooking.
4: When it is done, open the lid (Picture 6) and take out the stir paddle (use silicon glove to prevent burn of your fingers), add ½ tsp sesame oil, stir a few times.
5: Transfer cooked eggplant to a serving bowl and serve warm.
