【土豆烧蹄膀】

这个土豆烧蹄膀当天煮好就很美味,第二天带便当就更入味下饭。儿子毛毛一顿能吃很多块。
用料:
1:去骨蹄膀肉1100克,切成小块,洗净待用;
2:小土豆7个300克,去皮洗净待用;
3:橄榄油1大匙,葱1根切段,姜10克切片,八角1粒,丁香2粒,红糟 1大匙(没有红糟可以用酒酿或厨酒代替);
4:镇江香醋1茶匙,糖1.5茶匙,万字牌生抽酱油2大匙,草菇老抽酱油1大匙,头抽酱油1大匙,盐1/3茶匙;
5:橄榄油1大匙。
注:1大匙Tablespoon =15毫升,1茶匙Teaspoon =5毫升,1杯Cup=240毫升。
做法:
1、电压力锅按【煎炒 Sauté】键,选高温档,放入蹄膀肉,然后注入大半锅开水,烫3-5分钟(图1),捞出用冷水冲洗干净待用。
2、将电压力锅内胆洗干净,按【煎炒 Sauté】键,选高温档,放橄榄油1大匙,炒香葱姜、八角和丁香(图2)。放入红糟(图3)炒半分钟,然后放入洗净的蹄膀(图4)翻炒1-2分钟。
3、依次放入所有4料拌匀(图5),盖上盖子,排气阀放置密封位置,按【手动档 Manual】键,时间设置为35分钟,程序会自动启动。
4、趁着烧蹄膀的空档,将小土豆切为4等份(图6),冷水冲洗后沥水。不粘锅加1大匙油,置炉上开大火,放入土豆块(图7),四面煎黄后(图8)捞出。
5、电压力锅完成程序后,等3-5分钟,放气减压打开盖子(图9),捞出蹄膀肉放入碗里保温。压力锅再按【煎炒 Sauté】键,放入煎好的土豆块与肉汁同煮7-8分钟至汁浓稠(图10)。最后将煮好的蹄膀肉倒回锅里,轻轻拌匀即可出锅食用。
