【Chinese style Shrimp salad】

Serves: 8 servings
1) 1lb frozen deveined white shrimps (454g), 1/2 tsp corn starch, 1/2 tsp salt, 1/8 tsp ground white pepper, 1/2 tsp sesame oil;
2) 6 baby cucumbers (650g), ½ tsp salt;
3) 1 each yellow, white and purple baby carrots (total 160g);
4) 1 tbsp avocado oil, 1.5 tbsp chili oil, 1 tbsp freshly chopped green onion, 1 tbsp miced garlic, 2 tsp freshly minced ginger, ¼ tsp ground Sichuan peppercorn;
5) 1tbsp premium soy sauce, 2 tsp balsamic vinegar, 1/2 tbsp brown sugar, 1 tbsp sesame oil;
6) ½ cup roasted peanuts (125g).
1: Soak frozen shrimps in cold water to defrost. Peel and devein the shrimp, rinse under cold water and drain well. Place shrimps in a bowl, add the rest ingredients in Ingredient 1), mix well (Picture 3). Peel off skin of carrots, rinse with water and cut into thin slices (Picture 1), place them in a container and add ½ tsp salt mix and let it stand for 10 minutes and then discard excess water. Peel off skin of cucumbers, slice (Picture 2) and combine with 1/4 tsp salt and mixt well, let stand for 10 minutes and then discard excess water.
2: Plug in the Ropot cooker, press Power button to preheat the cooker.
3: Add 1 tbsp oil and shrimp (Picture 4). Close the lid, press Function to select Stirfry function, program starts. When the program ends, open the lid from side and transfer cooked shrimp to a plate.
4: Add 1.5 tbsp chili oil to the pot, add chopped green onion, minced garlic, minced ginger and ground Sichuan peppercorn (Picture 5) to the pot. Close the lid, press Function to select Stirfry function, press – sign and decrease time to 1.5 minutes, program starts.
5: When the program ends, open the lid and pour over sliced cucumber and carrots (Picture 6), combine and mix well. Add all ingredients of Ingredient 1) and roasted peanuts, mix well and serve.
