Maomao and MaomaoDad love peanut butter; I made these irresistible Chocolate Chip Peanut Butter Cookies today for them. Surely it disappears so fast.

Ingredients:

1) 2/3 cup unsifted all-purpose flour (105g), 1 tsp baking soda;
2) 1/4 cup butter (60g), 1 cup creamy peanut butter (240g), ¾ cup light brown sugar (130g);
3) 1 extra large egg, 1 tsp vanilla extract;
4) ¼ cup (47g) semi sweet chocolate chips;

Directions:

1: Place all ingredients of Ingredient 1) in a bowl (Picture 1) and mix well with a spoon, set aside. Place butter, peanut butter and sugar of Ingredient 2) in a bowl (Picture 2), beat with an electric mixer on high speed for 2 minutes (Picture 3).
2: Add 1 extra large egg and 1 tsp vanilla extract (Picture 4), beat at high speed for 2 more minutes until very smooth.

3: Add flour mixture (Picture 5), beat at low speed until combined (Picture 6). Scrub off the beaters, add chocolate chips (Picture 7) and use a spatula to mix until incorporated (Picture 8). Cover the dough and refrigerate for 30 minutes.
4: Preheat oven to 375F/190C. Divide dough into 24 equal portion, and use your hands (Picture 9) to roll each portion into a 2 cm diameter ball, place them on parchment paper lined baking sheet (Picture 10) spacing about 4 cm apart.

5: Bake at 375F/190C for 8-10 minutes until surface light brown. Remove from the oven and let it stand and cool for at least 10 minutes.
6: When cookies completely cool, serve.

    I bought and roasted some raw peanuts last week to cook Kung Pao chicken. After two failed attempts at Kung Pao chicken, I became a bit leery about using peanuts in Chinese cooking. While pondering what to do with the remaining peanuts, I came across this peanut butter cookies recipe posted by Maomaomom. Hence a good solution to my leftover peanuts.

    I made my own peanut butter by grinding roasted peanuts in a blender with a pinch of salt, a TBSP of honey and a TBSP of canola oil. Then I followed Maomaomom’s recipe to make a batch of peanut butter cookies. They were so yummy!

    I saw a few more highly rated peanut butter cookies recipes posted on other websites. They all seem a bit too fatty and sugary to me. Maomaomom’s recipe is hands down the best!
